FROM OAP'S KITCHEN - TEX-MEX ROLL-UPS By popular demand, below is the recipe for the Tex-Mex Roll-Ups as served at the Stitch & Bitch, Nov. 29, 2006 500 gr lean minced meat 500 ml chopped green or red pepper (about 1 1/2 peppers) 2 tbs chili powder 125 ml low fat sour cream 125 ml grated Cheddar & mozarella cheese - divided 8 15 cm flour tortillas 75 ml zesty-type Italian dressing 125 ml salsa Brown meat and drain off fat Stir in chili powder and peppers; cook five minutes or until peppers are crisp-tender Remove from heat Stir in sour cream and half the cheese Spoon about two heaping tablespoons of mixture onto each tortilla Roll up and arrange in a lightly oiled baking pan. Drizzle with dressing; top with salsa and rest of cheese. Bake about fifteen minutes @ 350 deg. F Broil 3 - 5 minutes about 12 -15 cm from heat, or until cheese is bubbly.
